Payments & checkout

Test every gateway with a real low-value order
Check tax and shipping rules for each region
Make sure guest checkout is enabled

Emails

Customise order confirmation and shipping emails
Send emails through SMTP, not PHP mail

Performance & security

Enable caching but exclude cart, checkout and my-account
Set up daily backups and a firewall
